Test site ?

Is it possible to activate the license on a test site to check everything is ok before installing it on the prod website ?

Sure, that is possible.
You can even decide not to activate the license on your dev/test site since we don’t count such websites towards the site limit.
Ok but how could I upgrade the plugin so ?
When you don’t activate the license, you can’t update the plugin to the latest version. You can install the latest version manually or still activate the license on your test site. You could try to activate the license on your test environment and just check the message if your test environment is recognized as a test environment since we try to recognize test/development domains.
