Comma creating serialized array
If I edit a field inline, and the value contains a comma, the plugin is creating a serialized array rather than a string with a comma. Is there a way to prevent this? Maybe by specifying a field type?

Can you tell me what column type you’re using and can you send me the settings for that column? It indeed sounds like unexpected behavior and I like to reproduce the issue on my own environment.
I found that it was JSON AP User Plus https://www.parorrey.com/solutions/json-api-user-plus/ that is causing this behavior.
Does this mean the issue is solved for you?
