Some entries are written in french in my WooCommerce fields. Is it possible to change the characters set for the Excel Export ?
I tried the hook filter ac/export/value in order to encode character, but it doesn’t seems to work..

The exported CSV is exported as UTF8 and it should be possible with your spreadsheet software to import the CSV with the correct encoding. I’m not sure how to do it, but I believe if you try to import the CSV with Google Sheets, it is recognized automatically. Based on your screenshot, I suspect that you use Microsoft Excel. In that case, you could have a look at the following page.
